This is TOO easy to NOT try.
and it's too YUMMY to not EAT!
What You Need: * I typically "eyeball" everything and added a bit more veggies to my mix!
| 3 | cups of grated raw cauliflower (use a cheese grater or food processor) | 
| ½ | cup frozen corn  | 
| ½ | cup carrots and pea medley (look for the frozen bag in your grocery store) | 
| 3-4 | garlic cloves, minced | 
| ½ | cup onion, diced | 
| 1tb | TBSP olive oil | 
| 2 | eggs (or 4 egg whites) scrambled | 
| 3 | TBSP soy sauce
 
  Directions:
 
 - Dice up onion into small chunks, then sauté until soft.
 - Mince garlic and add into the pan with the onion until garlic is golden brown
 - Add peas, carrots, and corn into the pan and stir until dethawed and soft (cooked through completely).
 - Add 3 eggs and scramble
 - Add riced cauliflower into the pan and then add the 3tbsp of soy sauce.
 - Stir for about 5-7 more minutes 
 - Add any protein sources you like: tofu, chicken, shrimp, etc! 
 - Let cool and Enjoy!
