Healthy Banana Nut French Toast




What you will need:
2 slices of Ezekiel bread
1/3C of Vanilla Almond milk
1/2t of vanilla extract
1t of cinnamon
1/2t of pumpkin spice
1 range free organic egg
1 egg white
1/2 banana sliced
3-4 pecans crushed
2tbsp of honey or agave nectar

Directions:
1. Heat skillet with 1tbsp of olive oil or coconut oil
2. Combine milk, vanilla extract, spices, eggs, beat until smooth
3. Soak bread in wet mixture and let it absorb
4. Place bread slices on hot skillet and let brown
5. Slice up banana and add crushed pecans on top, serve hot with agave nectar or honey!

YUM! Obviously this recipe doesn't take a genius to do it, but it's simple and easy. Perfect if you want a little sweetness in the morning. Which actually, I'm starting to steer away from but I wanted to try something new for you all! Hope you like it!

Pumpki Brownie Recipe

Why yes, I am at it again! No, I don't just bake brownies non stop, although I wish I could and not gain weight. That would be a win, SCORE!

Anyway, todays recipe is one that I heard about through the grapevine and I'm sure it's already out there on some other blog but I thought I'd share as well for my followers and people who know I LOVE to experiment!

So without further ado.

It's a brownie--with ONE mixing ingredient.
GUESS.


PUMPKIN. Weird right? So these brownies came out SUPER fudgey (not a word obviously) and VERY moist! UHMMM YUM. There is a slight pumpkin taste, so I may try to change it up next time. I totally recommend throwing some pecans and chocolate chips in there so it's not as pumpkin-y (another non word--I like to keep it grammatically correct around these parts).

Oh. and YES they do taste different, you're using freakin pumpkin, so if you come at me with 'ugh these are different, weird, yada yada yada' just keep that tid-bit in mind. =)

So you need:
Brownie mix
15oz can of Pumpkin.

Mix. Preheat at 350, bake for 40 mins. Keep an eye on them, time can vary!

Greek Yogurt Brownies

Well... healthi-ER brownies.. right now my stomach is absolutely growling with chocolate lover madness... but I know I need to make dinner.

Ok, so what are these so called healthy brownies you ask?! Don't worry... they are seriously amazing

You will need:

1/4 c of vanilla non fat Greek yogurt (Chobani, Fage, whatever)
1/3c of water
2 egg whites
your favorite brownie mix--I used Ghiradelli Dark Chocolate and added a few extra chocolate chips!

Directions:
Combine and eat that batter! Well, save some for baking.

Bake as directed on the box! ***Note that the amount of yogurt, water, and egg whites may vary based on the brand of brownie mix. (Yogurt replaces the oil – use 1/2 the amount that is suggested for oil; for every egg, add 2 egg white; water amount remains the same!)

They are actual more like cake brownies, still brownies in my opinion but WAY BETTER. I wasn't surprised!

Spaghetti Squash Recipe

Wow... so how did I NOT know about this amazing, and simple veggie that totally substitutes noodles ALL together. I swear, the longer I eat healthier and find alternative recipes, the more I'm impressed and wondering "WHY didn't I do this sooner?!"




What you Need:


  • Lean Ground Turkey
  • Spaghetti Sauce -- I found some good stuff from Trader Joes
  • Italian seasoning
  • 1 spaghetti squash
  • Garlic to taste
  • Pepper to taste
  • Olive Oil 
  • White or yellow onion


Directions:
*Preheat oven to 400 degrees 

  1. STAB the squash with a fork (or knife) in several spots, then bake in the oven at 400 degrees for 45 mins. 
  2. While the squash is cooking, cook turkey in the pan with diced onions, garlic and a little olive oil. Add whatever seasoning you like (I prefer basil, rosemary, italian). 
  3. Drain and and add the spaghetti sauce to the ground turkey, heat on low. 
  4. When the squash is done, cut in half, empty the seeds, then shred the insides into a large bowl
  5. Pour the spaghetti sauce and turkey on top of the spaghetti squash -- and thats it!

Thank you to my friend Amber Kuppert for posting this Shakeology Pie recipe, I cannot WAIT to try it today! I finally got my shipment in two days ago, thank GOODNESS! 

I'll admit I've been putting this off, but the sweet tooth is beckoning, and I can try one slice and not feel guilty, plus I'll be gone this weekend and Corey will be forced to eat the rest, how awful of me ;-)

Shakeology Pie Ingredients:
2 scoops of Chocolate Shakeology
1 container (12 oz) Firm Tofu
1/2 cup Organic Peanut Butter (or almond butter)
2 tsp fat free milk ( or almond milk)
Pie Crust of your choice, the healthier the better! 

Put all ingredients in a blender. Mix until smooth. Pour in pie crust. Refrigerate for 1 hour. BOOM!!!!!!!!!
